Spaghettini Carbonara

Pasta carbonara is a classic Italian dish that you will easily spend $15 for in a restaurant.

When you find out what the ingredients are used to make this dish; eggs, bacon or pancetta, Parmesan cheese and parsley, it seems ridiculous spending that much money on a meal!

Ingredients:
  • 1/2 lb of spaghettini pasta
  • 6-8 strips of Applewood Smoked Bacon – diced
  • 3 egg yolks
  • 1 cup of shredded Parmesan Cheese
  • 1/3 cup of chopped Parsley
  • 1 tsp Kosher Salt
  • Freshly cracked black pepper
Instructions:

Fry the diced bacon until crispy and set aside.

Boil the pasta in salted water for about 5-7 minutes, or until al dente.

In a large bowl, whisk the egg yolks. When the pasta is done and hot, add a little (1-2 tablespoons) of the pasta water in with the yolks. Then, add the hot pasta on top the yolk, gently tossing it.

Add the crispy bacon, parmesan cheese, parsley and salt and toss,

Garnish with freshly cracked pepper and serve.
