Tapioca & Brown Sugar Tofu Pudding, Filipino Taho


When I think of my early childhood growing up in Manila, Philippines, one of the food memories I have is eating Taho in the mornings. A man with a two huge caldrons would go around the neighborhood on his bicycle yelling, "Taaaaahooooooo!!" It signaled everyone to come out of their homes with their cups and mugs to get their morning fix of what is essentially soft tofu draped with delicious brown sugar syrup and tapioca. 

This is a delicious snack and treat that is the simplest to recreate at home. So, whether you love cooking the foods from the homeland to share with family and friends, or just discovering Filipino food, this is one recipe that is truly so simple to make and one you should try!


Tapioca & Brown Sugar Tofu Pudding

Ingredients:
  • 2 cups extra soft tofu
  • 3 cups water
  • 1 cup small or medium tapioca pearls
  • 2 cups brown sugar
Instructions:

Take a small sauce pot and add water and sugar. Bring to a boil. 

Add the tapioca and reduce heat to medium.

Stir often to make sure the tapioca doesn't stick to the pot. 

Cook for about 20 minutes until tapioca is clear and soft to the bite. 

Place 1 cup of tofu is two mugs. Then, spoon over the brown sugar and tapioca syrup over your tofu.
