‘Tis the season for fresh picked apples!
It is said that “An apple a day keeps the doctor away”, and it’s a sweet and crunchy treat this time of year. Apple pie is the dessert that probably comes to mind as soon as you smell the sweet smells of baked apples.
This recipe for Baked Apples with Granola bakes one of our favorite Fall fruits and topping it with granola, with a little butter and brown sugar. Adding in some cinnamon and nutmeg brings back those classic apple pie flavor but without the crust and baking in a lot less time.
Adding the crunchy granola gives this healthy treat a nice play on textures – but don’t forget to top it off with some French vanilla ice cream to make it a complete dessert!
Baked Apples with Granola a la Mode
3 Fuji or Gala apples – cut into halves and core
1.5 cups of your favorite granola
3 tablespoons of unsalted butter – melted
.5 cup of brown sugar
2 teaspoons of ground cinnamon
1 teaspoon of ground nutmeg
Your favorite vanilla ice cream
Heat the oven to 350 degrees.
Place the cored apples on a cookie sheet.
In a large bowl, gently toss the granola with butter, brown sugar, cinnamon and nutmeg.
Top the halved apples with granola.
Bake in the oven for 30-35 minutes, uncovered.
After about 35 minutes, let slightly cool and top with ice cream and/or whipped cream.
